Garlic Rosemary Potato Cakes Recipe

Heat the oven to 350° F.

Place the garlic and the oil in a small ovenproof pan, turn the garlic to coat it with oil and roast in the oven for about 30 minutes, stirring twice during the cooking time, until the garlic is golden and soft.

Combine in a mixer, or in a bowl using a wooden spoon, the garlic, the oil it was roasted in, the rosemary, and the potatoes. Mash the garlic first if you want it to be smooth; add it whole if you want it chunky.

Shape the mixture into cakes into cakes with your hands.

Fry the cakes in the butter for about 7 minutes on each side, until golden brown on both sides.
