Rouille

  • 3 egg yolks
  • 2 TBS minced fresh garlic
  • 1 roasted red pepper, seeded, skinned and cut in strips
  • ½ tsp freshly ground black pepper
  • pinch ground cayenne pepper
  • 1 TBS lemon juice
  • 1½ cups extra-virgin olive oil

Put all ingredients except the olive oil in the bowl of a food processor and blend until smooth. With the processor runnin, drizzle olive oil into bowl. Stop and scrape the sides of the processor and pulse once more.

Refrigerate until needed.
