Rouille Recipe
- 3 egg yolks
- 2 TBS minced fresh garlic
- 1 roasted red pepper, seeded, skinned and cut in strips
- ½ tsp freshly ground black pepper
- pinch ground cayenne pepper
- 1 TBS lemon juice
- 1½ cups extra-virgin olive oil
Put all ingredients except the olive oil in the bowl of a food processor and blend until smooth. With the processor running, drizzle olive oil into bowl. Stop and scrape the sides of the processor and pulse once more.
Refrigerate until needed.
