Mike’s Shrimp Scampi

  • ½ cup olive oil
  • 8 TBS butter (1 stick)
  • 2 heads garlic, peeled and finely chopped
  • juice of one lemon (about 3 TBS)
  • 2 TBS white wine
  • ½ tsp salt (or to taste)
  • freshly ground black pepper
  • 36 medium raw shrimp, shelled and deveined
  • 1 pound angel hair pasta

Bring a large pot of salted water to boil. Reduce heat to simmer. Have all ingredients close at hand.

Warm the boiling a large saucepan or skillet, the melt the butter in the oil. Add the garlic and cook briefly, just until fragrant. Add the lemon juice and the white wine, along with the salt and a few grinds of black pepper.

Add the shrimp and cook just until done; the shrimp will curl up and turn pink.

Return the pasta water to boil, then add the pasta. Cook until just done (about 3 minutes.)

Drain the pasta, divide into bowls, then pour the sauce over the pasta with 6 shrimp per serving. Serve at once. Yum.
